As proven by tests, almond butter regulates the cholesterol level. It contains a good source of vitamin E, so it has anti-oxidative and anti-inflammatory effects. It reduces the risk of the accumulation of atherosclerotic plaque. Medium-chain fatty acids (MCT), including lauric acid, have totally different properties from the “infamous” fatty acids. First of all, they are metabolised in a totally different way from other fatty acids: they are transferred from the digestive tract directly to the liver, where they are used as a quickly absorbable source of energy, or they are changed into so-called ketone compounds, which can have a therapeutic effect on the nervous system in cases of such diseases as epilepsy and Alzeimer’s disease.
